eating the rainbow

I posted this photo on facebook last night right before dinner. It got something like 25 “likes” so I thought you’d like to see it, too! And I’ll even tell you what’s in that rainbow!

The little bowl was for Nat, since she’s not a huge fan of leafy greens (though I do get her to drink green juice & smoothies, and she’ll eat spinach out of her Grammy’s garden!). She got grape tomatoes, carrot sticks, a mini cucumber, broccoli florets (she prefers them really small these days) and blueberries. She also got some turnip slices, sliced almonds and some avocado at the dinner table. We rounded it all out with some Quorn guyere cutlets, if you must know. mmm, mycoprotein.

Our salad included:

  • Fresh organic spinach (from my mom’s garden!)
  • Organic baby arugula
  • Fresh organic basil and cilantro (from our deck planters — thanks mom!)
  • Organic blueberries
  • Organic grape tomatoes
  • Sliced raddichio (purple!)
  • Sliced baby bella mushrooms
  • Organic pea shoots
  • Shaved organic carrot
  • Raw broccoli
  • Cubed local organic turnips
  • Sliced organic cucumber
  • Sliced almonds

Toss with a good quality organic olive oil and balsamic vinegar, and a touch of himalayan sea salt (pink!). Yum!

I think we were really just missing yellow. Next time maybe some squash? Or….?
